Chewy oat & seed slice

Full of fiber, lovely fats and nourishing low GI goodness, this slice is great as a snack at any time of day or as part of a yummy breakfast combined with yogurt, fresh fruit and a pot of tea or coffee…

INGREDIENTS:
2 cups of rolled oats
½ cup chia seeds
¾ cup whole flax seeds
¾ cup shredded coconut
½ cup dried cranberries
¼ cup cacao nibs or dark choc chips
½ cup chopped nuts
3 Tbsp hulled tahini
3 Tbsp honey
1 ½ tsp ground cinnamon
1 tsp ground nutmeg
Dash of vanilla essence
Pinch of salt
METHOD:
Preheat your oven to 180 degrees (Celsius)
Combine chia and flax seeds in a bowl and soak in water for at least 20 minutes
Whilst the seeds are soaking; combine oats, coconut, cranberries, cacao nibs, nuts, cinnamon, nutmeg and salt in a large mixing bowl
Mix with a spoon or your hands until all are well combined
Add tahini, honey and vanilla essence
Add the soaked seeds (after 20 min) and combine well
Line baking tray with baking paper and spoon the mixture onto it
Spread out until evenly covering the whole tray
Pop into the oven for approx. 25-30 minutes (for a fan-forced oven) until slightly brown or to your liking
Remove the tray from the oven and allow to cool
When slice has cooled, chop into squares or bars
NOTES:
*Feel free to use other dried fruit/s of your choice ie; apricots, dates, sultanas (go for sulphite free if you can)
**You can use more cacao nibs/dark choc chips if you like, this was all I had left on the day I was playing around with this recipe!
***I used hazelnuts, pecans and almonds as that was what I had available – mix and match these with other nut combos of your choice
****Other seed or nut butters would work well too
